New Recipe
I based this recipe on a recipe James’ cousin James Fogerson gave me for a similar dish made with beef. I added the Serrano peppers, switched to sliced green chilies instead of diced and added more of them. They have such a great flavor.
Green Chili Pork Tacos
Ingredients:
2 pounds of boneless pork chops
2 cans of whole green chilies
4 fresh Serrano Peppers halved and seeded
1 can of rotel tomatoes and green chilies use hot or original
2 or 3 medium baking potatoes peeled and cubed
2 tsp Salt
1 tsp Pepper
1 Tbsp Cumin
1 Tbsp Chili powder
1 Tbsp Garlic Powder
Corn tortillas
Cheddar Cheese
Sour Cream (optional)
Guacamole (optional)
Brown pork chops in skillet. Season with a pinch of salt and pepper. Transfer to crock pot. Pour juice from chilies into crock pot and slice chilies crossways into about ¼ inch slices. Add to pot. Combine the next 8 ingredients in a large bowl and add to crock pot. Cook on low about 8 hours or until pork is fork tender. With a fork, shred pork and mix all ingredients together. (At this point, pork mixture can be refrigerated for later use. The flavors will get more intense! ) Warm tortillas by heating on a griddle or skillet with a drop of olive oil. Turn once or twice until tortilla starts to puff slightly. Layer 2 corn tortillas on a plate and top with pork mixture. Top with cheese, guacamole, and or sour cream. Use 2 tortillas for each taco because they break easily. This will help keep the filling inside the taco.

ReplyDeleteWhy waste good pork chops. If you are going to make this dish try using pork sholder, scrap pork or pork for "carnitas".
ReplyDeleteMe, I'n not a big fan of the Mex Menue so I would just salt and pepper the chops and brown them in a heavy covered skillet. When good and brown on each side add about a cup of water to the pan and cover. Turn the chops every few min. until the water is gone and enjoy along side those potatoes sliced thin and fried in hot peanut oil.
